Every pizza maker's sauce is different. That is because sauce is made to taste. It's more important to have a knowledgeable palette than it is to have a recipe. All the ingredients you need are listed below.
1 Large Can Peeled San Marzano Tomatoes
3 Tablespoons of Olive oil
2 Teaspoons of Garlic powder
Black pepper to Taste
Oregano to Taste
- In a large bowl, empty the peeled tomatoes and start breaking them up. A potato masher works very well.
- Mix in the olive oil and garlic powder.
- Then, wake up your palette. Begin with the pepper. You will be safe with a half teaspoon before you need to start tasting.
- Add a small amount of salt. Less than a teaspoon. Garlic powder already has some saltiness to it so be careful not to add too much.
- Add a desired amount of oregano. Once you've added a little of everything, continue tasting your sauce to see what it needs and add accordingly.
Remember, you can always add but never remove (the opposite of getting your haircut) so be frugal with your ingredients. Also, take into consideration the taste of your cheese, dough, and other toppings. Chances are they already contain salt, pepper, and garlic so don't overdo it. Nobody wants to pucker while eating pizza!
