Four Cheese Sicilian Pizza

Of course you’ve seen a four cheese pizza before, but this one will actually get you excited about one. While the usual suspects are here - mozzarella, parm, gorgonzola, and asiago - we kick it up a notch with crushed pecans, and then kick it up another notch with a generous drizzle Mike’s Hot Honey. It’s cheesy, salty, creamy, funky, crunchy, a little sweet, and a little spicy. This is how you four cheese. Enjoy!

Steps

1. Prepare and stretch dough as described in the Simple Sicilian Dough Recipe.

2. Lay down the mozzarella like below.

3. Prepare the parmesan cream sauce as described in this recipe and spread it around evenly. Leave a little bit of room for a crust to form.

4. Scatter around the gorgonzola cheese.

5. Next add the Asiago

6. Now it’s time for the pecans. You can crush them by hand or place them in a sealed plastic bag and smash with the smooth side of a kitchen mallet.

7. Sprinkle around the crushed pecans. This is where you elevate the common four cheese pizza by introducing great texture and a complimentary taste often found on a cheese board or platter.

8. Drizzle some extra virgin olive oil over the top.

9. Bake or convect bake at 500F. My pizzas are baked for roughly 16 minutes in an electric home oven on convect at 500F.

10. Now, to elevate this pizza even more, hit it with a post bake drizzle of Mike’s Hot Honey.
