Spinach and Mushroom Sicilian Pizza

Spinach, mushroom, and garlic is a classic order for when you want to mix in a meatless option. In this “white” version, we’re not applying garlic as a topping but rather taking another opportunity to use our roasted garlic cream sauce. Enjoy!

Steps

1. Slice the mushrooms lengthwise. Remove any unpleasant stems from the mushrooms and any long stems from the spinach. Approximate quantities shown below.

2. Add the mushrooms, extra virgin olive oil, and desired amount of salt and pepper to a mixing bowl and toss so they are dressed evenly. This is a light dressing, there shouldn’t be any oil at the bottom of the bowl.

3. Prepare and stretch dough as described in the Simple Sicilian Dough Recipe.

4. Lay down the mozzarella like below.

5. Prepare the roasted garlic cream sauce as described in this recipe and spread it around evenly. Leave a little bit of room for a crust to form.

6. Lay down a double layer of spinach.

7. Sprinkle some parmigiano or pecorino. I learned this in my family’s pizzeria. Every time they added a relatively watery topping to a pizza, like spinach, they always hit it with some parm.

8. Scatter around the dressed mushrooms and give the pizza a drizzle of extra virgin olive oil.

9. Bake or convect bake at 500F. My pizzas are baked for roughly 16 minutes in an electric home oven on convect at 500F. Please tag @forzapizza in all your pizza-making pics!
