Zucchini and Broccoli Crumbles Sicilian Pizza

Broccoli is good, but biting into a stalk on your pizza isn’t the best way to incorporate it. Enter the BROCCOLI CRUMBLE! Roughly chopping the broccoli head allows you to scatter the broccoli in small pieces as opposed to leaving it in stalks. It also ensures the broccoli will cook all the way through and eliminates the need for any pre-cooking. It’s a great pizza for when you want to keep things light and green, but can always be cranked up with our famous roasted garlic cream sauce. Eat your broccoli and enjoy!

Steps

1. Using a mandolin, thinly slice the zucchinis on the short side.

2. Put the zucchini slices in a large bowl and season with salt, pepper, and olive oil.

3. Chop the head of the broccoli and some of the stem into crumbles as shown below. It is ok to use the broccoli stalk so we’re not wasting food, but be sure to chop it much finer than the crumbles.

4. Prepare and stretch dough as described in the Simple Sicilian Dough Recipe.

5. Lay down the mozzarella like below.

6. Lay down the the zucchini slices by overlapping the previous row by about a quarter of a slice.

7. Spread the broccoli crumbles over the entire pizza.

8. Scatter around the chopped garlic and feel free to hit it with a drizzle of extra virgin olive oil.

9. Bake or convect bake at 500F. My pizzas are baked for roughly 16 minutes in an electric home oven on convect at 500F.
